Easy and delicious Asparagus with a lemon flavor. Perfect as a side dish with any meal.
Nothing melts in the mouth as roasted fresh Asparagus. Enhanced with a lemon flavor and seasoning, this will surely be a favorite at the dinner table.
Roasted Asparagus
Ingredients:
1-2 bunches Fresh Asparagus (since you will want to lay the stalks side by side and not overlapping in the dish, buy as many as you can fit in your baking pan)
2 Tablespoons Canola Oil
2 tablespoons fresh lemon juice
Salt & Pepper to Taste
Preparation:
Preheat oven to 375 degrees
Wash Asparagus and cut off the thicker woody end pieces
Use a stoneware baking dish (8 x 8 or 8 x 12) and put in the oil and lemon juice
Place Asparagus in pan and using your hands, sprinkle the oil mixture on Asparagus until the vegetables are covered.
Sprinkle with Salt and Pepper
Place in oven on next to lowest rack and cook 15-20 minutes (half-way through the bake shake up the pan to rotate the Asparagus stalks.
When the stalks are soft throughout but still just a slight crisp, remove from oven.
