Fried Spicy Chinese Potatoes



It was “Potato” week in the SkinnieFats kitchen, and this was the winner! A skillet of fried potatoes is always a hit and favorite in our home, but with the added Asian seasonings these came out on top.


Ingredients (serves 2-4)


4 large golden potatoes

4 tablespoon soy sauce

2 tablespoons rice wine vinegar

1 teaspoon sugar

1/4 teaspoon red pepper flakes

2 tablespoons Olive oil

1 elephant clove of garlic, diced

5 green onions, chopped fine

1 poblano green pepper, chopped fine


Instructions:


  • Mix all the ingredients for the sauce together: soy sauce, vinegar, sugar, red pepper flakes and 1 tablespoopn of water.

  • Heat the Olive oil in a skillet and then add the potatoes for frying. Be sure to turn them every few minutes so they do not stick to the pan. The potatoes will get soft in about 5 minutes.

  • Add the garlic, green onions and poblano pepper to the potatoes. Stir until garlic is slightly brown.

  • Add the sauce to the pan and cook for another 2-3 minutes. The sauce will thicken as it cooks as the potatoes will absorb the sauce.

  • Serve
