Salad is one of my favorite dishes. I am pretty sure I got this from my dad who happened to be a great salad maker. Salad was served seven days a week with every dinner. I will admit that today, if I have left over salad from the night before, I will eat it for breakfast!
Ingredients (for the salad pictured above)
1large carrots - washed, peeled and sliced
2 Roma tomatoes sliced in cubes
1 small onion, sliced in bite size pieces
1/2 cucumber sliced in thin circles and then again in half
2 hard boiled eggs, peeled and sliced
1 celery stalk, sliced down the middle and cubed
4-5 green Kalamata olives, pitted and sliced in half
4-5 Black Kalamata olives, pitted and sliced in half
1 head Romain lettuce, washed and chopped
2 tablespoons grated Parmesan cheese
Preparation
Place the chopped lettuce on the plate
Scatter the carrots, onion, celery on top of the lettuce
Sprinkle the green and black olives on top
Place the cubed tomatoes along the edge on one side of the plate
Place the cucumbers along the edge on the other side of the plate
Fan open the sliced egg on top of the lettuce mixtgure
Sprinkle with a little Parmesan cheese
Serve with your favorite Fat Free dressing.
