This is my “go to” my “comfort food” when I have had a long day or just need a quick meal that tastes wonderful. And if there are any left overs, it makes a delicious base for a scrambled egg omelet the next morning.
Ingredients (4 servings)
1 pound skinless turkey Kielbasa
1 medium onion
1/2 green bell pepper
1/2 yellow or orange bell pepper
1/2 red bell pepper
Preparation
Slice the kielbasa into 1/2 inch circles
Peel and slice the onion into quarters, then quarter again
Slice the bell peppers into long thin strips
Cut the potatoes in long quarters, then cut again into cubes
Heat a pan with 3 tablespoons canola oil, and let the oil heat (but do not let it smoke) on medium heat.
Add the potatoes, then the sausage, the onions and peppers.
Sprinkle salt to taste.
Add a few turns of the pepper grinder.
Stir the mixture a few times, then put a lid on the pan and keep heat at medium.
After 10 minutes check the tenderness of the vegetables. If they are close to being done, remove the lid and continue cooking. Removing the lid will allow the meat and vegetables to brown slightly before serving.
When the potatoes are tender, serve.
This dish goes well with a sprinkle of your favorite hot sauce on top, or some salsa. Serve with a piece of corn on the cob or some fresh bread.
