Not only is this a delicious dish to eat with family, but it is fun to make together. You can use fresh ground Lean Pork or Ground Chicken Breast to make this quick and fun meal.
Pork Dumplings (Chicken Dumplings, see notes below)
Ingredients:
Dumplings
1 package square dumpling wrappers
1 pound fresh, lien ground pork
1 medium onion chopped fine
1 beaten egg
1 tablespoon reduced sodium soy sauce
1 tablespoon Chinese rice wine vinegar
1 teaspoon Chinese 5 Spice
½ teaspoon salt
½ teaspoon black pepper
Dipping Sauce (per person)
2 tablespoons reduced sodium soy sauce
1 tablespoon rice wine vinegar
1 teaspoon sesame oil
1 teaspoon fresh grated ginger
1-2 chopped scallions
Dried red pepper to taste, if you like a bit of heat
Preparation
Mix the meat and all spices and sauces together to make the Dumpling mix and chill in refrigerator about 30 minutes.
Lightly flour a bread board
Fill a small bowl with water (this is used to seal the edges)
Lay out 6-8 dumpling wrappers on bread board
Place a spoonful of filling in the center of each one
Fold over in a triangle shape
Brush a very small amount of water along the two sides of each triangle and pinch sealed.
Place into one of the bamboo trays for steaming which have been lined with tray paper
Repeat above and fill the second tray.
Place the bamboo lid on steamer basket
Place the bamboo tray on top of a steaming grid in a Wok or other pan large enough for the width of the steamer pot that has simmering water.
Steam 10-15 minutes.
Be sure to check water level. It should not boil against bottom of bamboo basket and should not run dry. You may have to add water as you go along.
Once steamed, remove from pot, place on serving tray with dipping sauce.
Goes well with clear Japanese soup, fried rice, or hot and spicy thin noodles or zoodles.

Note if substituting Chicken for the Pork:,
If using fresh ground chicken breast, add 4 tablespoons of nonfat half and half to the mix. It will give the chicken moisture for cooking.
Chicken when cooked will swell, so use a smaller amount in the shells prior to sealing so they do not break open in steaming.
Note: If you like a bit of crisp on your dumplings, you can place them in a skillet prepared with 2 tablespoons Canola oil and brown both sides gently on medium heat. Remove and serve.
