Pork street tacos cooked on the flat top griddle with all the fixings to top or eat alongside. Nothing says a summer evening than this tasty dish. Quick and delicious.
Ingredients:
1 pound Lean Pork Loin
1-2 Onions
1 Red Bell pepper
2 Green Bell pepper
1 teaspoon Garlic Powder
1/2 teaspoon Chili Powder
1/2 teaspoon Smoky Paprika
Black pepper
Salt
1-2 tablespoons Canola Oil
Wraps
Corn Taco Shells
Flour Taco Shells
Toppings
Non Fat Shredded Cheddar Cheese Mixture (recipe below)
Fresh Guacamole
1 can Refried beans, heated
1 can seasoned Black beans, heated
2 cups shredded Lettuce
Your favorite salsa (or my homemade salsa)
Chopped raw onion
Chopped fresh tomatoes
Fat free sour cream
Hot sauces of choice
Preparation
Meat Mixture:
Chop peppers and onions in strips
Slice pork in thin pieces and place in bowl with the garlic powder, chili powder, smoky paprika, pepper and salt. Mix well together.
Toppings:
Prior to starting up the outside flat top griddle be sure to have all your toppings prepared. Chop the tomatoes, raw onions and make the cheese mixture. Set on the serving table to be ready when you bring in the meat and tortillas.
Note: If you do not have a flat top griddle, you can use a very large cast iron or heavy skillet on the stove top, or you can use a heavy duty Wok, either electric or stove top.
Cooking:
Place oil on griddle and stir fry peppers and onions
At the same time on another area of the griddle stir fry the pork in a tablespoon of Canola oil.
Onions & Peppers are done when they are soft.
Pork is done and tender when it can be cut with a fork.
Take up vegetables and pork and place on a warm platter.
Place as many corn and flour tortillas as you can on the flat top or skillet with heat medium high. Turn after a few seconds as they will brown quickly. You can even use this method in a Wok.
Once brown, place tortillas on the same warming tray.
Serve along side all your favorite sides.
Recipe for Cheese Mixture
Non-fat cheese is not as favorable as regular cheese, but it is non-fat. To help with flavor, I have mixed a couple cheeses and then added a hint of Parmesan to give flavor. Try it out. I think you will enjoy.
1 package non-fat shredded cheddar cheese
1 package non-fat mozzarella cheese
1/2 cup dried Parmesan (or fresh) cheese
Mix all together.
