Easy and delicious carrots as a side dish
My favorite vegetable of all time is a carrot. Raw in a salad, roasted in the oven with other root vegetables, or this sweet recipe that goes with everything.
Roasted Carrots
1/2 Pound Carrots
2 Tablespoons Canola Oil
1/4 Cup Honey
Salt & Pepper
1/2 Teaspoon Rosemary
Preparation
Using a vegetable peeler, peel carrots.
Wash thoroughly the carrots.
Cut vegetables in half lengthwise.
Slice into strips about 4 inches long.
Mix the Canola Oil and Honey in a baking dish.
Add the vegetables and mix to coat vegetables.
Sprinkle Salt & Pepper and Rosemary on top of the vegetables.
Seal with a tight cover.
Place in preheated 350 degree oven for approximately 30 minutes.
Remove from oven when vegetables fork tender.
Cooks' Notes
Sometimes I like to have a bit of browning on my vegetables. To do this, I remove the lid for 5-10 minutes prior to the end of the baking time.
During the holiday season, I also add sliced Parsnips. Perfect combination.
