Scotch Eggs

I first ate a Scotch egg in Edinburgh, Scotland and fell in love with the flavors. A perfectly hard boiled egg, surrounded with flavorful sausage and deep fried. Now, with the help of an air fryer and making sausage from lean ground pork, these delights are on the menu!

Scotch Eggs


Ingredients (serves 4)


4 medium eggs


For the sausage:


3/4 pound lean ground pork

1/2 teaspoon salt

1/2 teaspoon pepper

2 teaspoons Thyme

1 teaspoon sage

1 teaspoon brown sugar

1/2 teaspoon allspice

Dash of Nutmeg

1/4 cup chopped fresh parsley

1/4 teaspoon onion powder

1/8 teaspoon cayenne or Himalayan Paprika

1 small onion, chopped fine


For coating:


1/2 cup all purpose flour seasoned with salt and pepper.

1 beaten egg

1/2 cup Italian flavored fine ground bread crumbs

Spritzer of Olive Oil or Canola Oil


Directions:


  • Place 4 medium eggs in a pot and cover with water, bringing to a boil. Let boil and reduce heat to medium, letting eggs boil 8 minutes. Once eggs have cooked, drain water from them, fill pan with cold water and peel shells from eggs. Sit eggs in a bowl for later.

  • Preheat the air fryer at 400 degrees

  • To make sausage covering: Mix the ground pork with all the ingredients listed above. Mix very well with your hands to get everything throughly seasoned throughout the meat.

  • Divide the meat mixture into 4 pieces and flatten on a board covered with a piece of parchment paper. This will make the patties easy to remove.

  • Put the seasoned flour on a small plate.

  • Take an egg and roll it in the flour until it is thoroughly covered.

  • Place the egg on a pork patty and wrap the sausage all around the egg until it is evenly covered and no egg shows through.

  • Dip the sausage covered egg in the beaten egg mixture and coat well.

  • Dip the egg covered sausage in the bread crumbs and cover completely.

Repeat steps above for each of the eggs.

  • Once all eggs are covered they are ready to air fry.

  • Lightly spray the air fryer pan with a coating of canola oil.

  • Place each egg in the air fryer, giving space between the eggs.

  • Spritz with a light coating of oil on top of eggs.

  • Air fry at 350 for 10-15 minutes. Check after 10 minutes to see how brown the eggs are coming along. If not a golden brown, continue for 5 more minutes.

  • When sausage has browned, turn sausage eggs over to other side.

  • Spritz with a light coating of oil.

  • Continue in air fryer at 350 for 10-15 minutes. Again, check after 10 minutes. If the sausages are brown and crispy (but not burnt) on outside, they are done.


When done, remove eggs to a platter and let cool.


Serve with a vegetable salad and your favorite sauces. I like to serve the eggs with a drizzle of Red Pepper Jelly (recipe on the blog), or serve with various mustards, sauces or chutney.

Cooks Notes: If lean ground pork is not available, it can easily be made at home and used to make the sausage. Purchase 4 , boneless loin pork chops (3 ounces each). For this recipe 12 ounces total. Remove all fat on edges, chop into smaller pieces and put in a food chopper. Mince the meat and use the minced meat to make the pork sausage. Store purchased sausage meat is high in saturated fat. You want lean pork which is typically per serving 3 oz and contains 4.4 grams of saturated fat.
